Helmed by Chef Abel Ortiz Alvarez, new Soho addition Chullschick specialises in authentic rotisserie chicken, also known as pollo a la brasa, and a whole host of casual Peruvian eats, like tiger's milk ceviche. Chullschick's chickens are marinated for two days in dark beer and spices, and roasted for an hour using an eco-friendly rotisserie grill.
